Civet Coffee is the most expensive coffee in the world. And of course, the best place to try Civet Coffee is from where it’s made.

After visiting the Mt. Apo Highland Resort, we went straight to the Mt. Apo Civet Coffee Farm to get a closer look on the place where Civet Coffee is made. Its location is at the foot of Mt. Apo, the highest mountain in the Philippines. Its soil is perfect for growing coffee beans.

Mr. Sonny Dizon owns the Mt. Apo Civet Coffee Farm. The civet coffee farm was put up in order to help save the civet cats instead of being killed by farmers. It was also put up so that it could help coffee farmers in Davao.

How a Civet Coffee is Made

First, a civet cat is fed with coffee (fresh berries). The dung of the civet cat is fermented. After which, the dung will be rinsed and washed in order to have the impurities removed. It will then be dried under the sun then, the parchment, silver skin and silver skin residues shall be removed. Afterwards, lower quality beans will be removed. Finally, the remaining beans will be roasted. Then the finished product, Civet Coffee Beans, are then packed and sealed for freshness.

Civet Coffee’s flavor is bold and full. Civet coffee is best enjoyed by mixing it with some sugar.

If you’re interested to buy the Civet Coffee, I suggest that you get them at the Mt. Apo Civet Coffee Farm if ever you’ll go to Kapatagan Valley. In addition to that, it’s also available in Davao Crocodile Park and other souvenir shops in Davao City. A whole pack of civet coffee costs around PHP 950 for 200 grams. The Mt. Apo Altura Coffee is a cheaper, around PHP 300 per 200 grams.
